Sweet & Sour Chicken {Tried & True-ly Yummy!]



































hey all!  It has been a little while since I have posted...bEEN PREOCCUPIED WITH lots of packing and then lots and lots of driving (and stopping!)...to get to our new home in aRIZONA!

...lOTS OF HOURS IN THE CAR WITH 3 LITTLE ONES UNDER 4 YRS OLD (HE ISN'T EVEN 4 YET ;) dRIVING from UTah...FOLLOWING BEHIND MY HUSBAND IN THE moving truck...

DEFINITELY NOT AS FAST AS WE COULD have BE GOING...IF WE HAD 0-2 KIDS AND WITHOUT A MOVING TRUCK. HA-HA.  bUT WE MADE IT! 

tHIS HEAT HERE IN THE PRIME TIME OF SUMMER IS JUST RIDICULOUS, BUT WE ARE VERY MUCH LOOKING FORWARD TO OCTOBER WHEN WE HEar IT IS REALLY REALLY reeeally NICE--- ALL THE DAY LONG.

Aside from moving across states, this recipe is one that i have made at least 5, 6, 7 times in the past 3 months or so. Everyone in our family loves it...which, if you remember from past posts...its not always easy getting that outcome with the personality and taste buds within our homes walls. ha

 My 2-yr old can be very picky with texture alone...and trying things outside of his ('lunch') box ;) And my husband (sometimes myself) is not very often a fan of onions or that flavoring in something he is going to love, but this has just that and we were both nicely surprised by its comfort food taste and wonderful flavor.

I hope you will give this one a try and let me in on how your dinner time goes. it is sure to delight you and the fam!


So here is the recipe!

SWEET AND SOUR CHICKEN

INGREDIENTS
  • 4 chicken breasts – skinless & boneless
  • ½ cup Western or Red Russian Dressing
  • ½ cup Apricot, Pineapple, Peach Jam or a combination
  • 1 envelope Lipton Onion Soup Mix - dry
  • 1 tablespoon Soy Sauce
  • ¼-½ teaspoon red pepper flakes - per taste
  • 1 teaspoon dry mustard – optional

INSTRUCTIONS
  1. Preheat the oven to 350F.
  2. Spray a baking dish.
  3. Place the chicken in the dish.
  4. Combine all other ingredients in a medium bowl and mix well.
  5. Pour the Jam mixture over the chicken.
  6. Bake covered at 350F for 20 minutes.
  7. After 20 minutes, remove the cover and bake 15-20 minutes or just until breasts are cooked through.
  8. Serve with rice.
  9. Enjoy!

Note: If you cant find the pineapple Apricot (mixed flavor) jam, just get one jar of each and scoop out 1/2 cup each flavor. So, in other words, one cup of the pineapple apricot preserves/jam or 1/2 cup pineapple preserves, 1/2 cup apricot preserves and half cup peach preserves.

*I have also added peach juice (from canned peaches in 100% juice) to the other jams when i couldn't find peach preserves and it turned out great!

Best Corn Bread (healthier)


Best Corn Bread Ever (healthier)

So this cornbread is just DEE-vine!  

Super MOIST, and way healthier than my other corn bread favorite...Naughty Corn Bread (This recipe is super great as well, but in my book... more of a dessert-y kind, so you wouldn't regret trying it out also!)
I will definitely be sharing this one (Best Corn Bread) with neighbors and friends...until the day I die...ha ha.

 No, really. Its that great.

-Here is what ya need-

The Best Cornbread
Prep Time: 10 minutes
Cook Time: 25 minutes
Total Time: 1 hour, 10 minutes
Yield: About 15 servings
Ingredients
  • 1 1/2 cups cornmeal
  • 1 1/2 cups buttermilk
  • 1 1/2 cups all-purpose flour
  • 1 1/2 tsp baking powder
  • 3/4 tsp baking soda
  • 3/4 tsp salt
  • 6 Tbsp butter, melted (I just used salted)
  • 1 cup unsweetened applesauce (at room temperature)
  • 1/2 cup granulated sugar
  • 3 Tbsp honey
  • 3 large eggs

Now I even ate mine plain...with nothing on top (honey butter, etc.) and it was irresistible!

Let everyone know what you're doing.
When you register your stand, you’ll automatically receive an online fundraising page you can share with friends on social media or in emails It's a great way to receive donations from people who may not be able to attend your stand. Put up fliers and contact local radio, newspapers and TV stations to get the word out (for support with contacting media, email Gillian Kocher, our Public Relations Specialist) Be sure to check out our downloads!

The big day is here - have fun! 
We suggest that instead of putting a price on each cup of lemonade, simply ask for a donation. Be sure to let your supporters know that you can accept checks and text donations as well as cash. Consider adding on a raffle or selling baked goods or craft items at your stand to maximize your donations. Be creative - the sky is the limit!

National Donut Day--June 5th 2015 (See here where you can score Free Donuts!)


  • Updated for National Donut Day 2015
  • National Donut Day, or National "Doughnut" Day, was created by The Salvation Army in 1938 to honor those who served doughnuts to soldiers during World War I. Many donut shops like to celebrate this day by giving away free donuts.
    This year in celebration of National Donut Day you can get free donuts from Krispy Kreme, Dunkin Donuts, Tim Hortons, LaMar's Donuts, Shipley Do-Nuts, Winn-Dixie, and more.

  • National Donut Day is on the first Friday of June each year. This year it's on Friday, June 5, 2015.

  • Krispy Kreme - You can go to your local Krispy Kreme on National Donut Day and get any doughnut for free, no purchase necessary.
  •  
  • Dunkin' Donuts - Dunkin' Donuts is giving away a free donut of your choice with a purchase of any beverage on June 6th. A small regular coffee shouldn't set you back too much. Here are their locations.
     
  • Tim Hortons - Tim Horton's will be giving out free donuts with any purchase on Friday, June 6th. This is valid at their U.S. stores.
     
  • LaMar's Donuts - Visit LaMar's Donuts on Friday, June 6 to get any donut that has a hole for free. There's absolutely no purchase necessary. Here's a list of locations.
     
  • Shipley Do-Nuts - Participating Shipley Do-Nuts will be giving away a free glazed donut and and a small coffee, no purchase necessary. This offer is valid from 5:00 a.m. to 12:00 p.m. Call your nearest location before you head out to make sure they're participating.

  • Winn-Dixie - Winn-Dixie will be giving out free jumbo doughnut holes on National Donut Day. There's a limit of one per customer and they're only available while supplies last. No purchase necessary.
     
  • Kwik Trip - Use this coupon at your local Kwik Trip to get a free Glazers Donut June 6-7. There's no purchase necessary and it's limited to one free donut per person.
     
  • Thorntons - Download the Thorntons mobile app and you can access a coupon that you can redeem for a free donut at any of their convenience store locations. There's no purchase necessary and the coupon can be redeemed any time between June 3rd and 9th.
     
  • Cumberland Farms - Stop by your local Cumberland Farms convenience store on Friday, June 6, and you'll get a free donut with purchase of any hot or iced coffee.
     
  • Bennett's Fresh Roast - Bennett's Fresh Roast in Florida will be giving out one free doughnut per customer with the purchase of any size coffee.
